Billy Tannery believes we should be using more kid leather. Due to the rise in popularity for goat dairy products, there are thousands of male goats without a traditional purpose in the UK. Thanks to pioneering supplier Cabrito, goat meat has seen a recent boom in popularity and stars on the menu at Temper Soho, where chef-owner Neil Rankin and his team cook South American-inspired dishes over an open fire pit.
This special collaboration between Billy Tannery and Temper is a chance to rediscover the vital role that leather and leathercraft play in the reduction of food waste. Billy Tannery began with a discovery that, despite the thousands of goats eaten each year in the UK, not one goatskin was tanned here. In their new micro-tannery near Northampton, Billy Tannery is reviving local leather-making skills and last year launched a range of British-made leather goods which will be on display in Temper Soho throughout London Craft Week.
